I know a G5 is not required to run Maya. possibly the latest version, but I was running a recent version on my not-so-powerful emac. Those machines are definietely not G5. Far from it.

I don't believe there's an Intel-native version of Maya yet. It's a pretty demanding piece of software, so I have no idea what it would do under Rosetta on an Intel Mac. It's pretty likely Autodesk will do an Intel version soon. When they do, your MacBook should be up to the task.

I'm sure it was pretty pokey on your eMac.

Another way to run it, is to use Boot Camp and run a windows copy of Maya until they release it for MacIntels.
