Put your ISO setting on 80 and just adjast your shutter speed so not much light gets though eg 1/1000...but dont take photo's facing towards the sun.

Your automatic exposure settings are trying to compensate for the brightness of the sunlight.
Here's a trick I use to fool the camera.
You know how your manual says to press the button partway to focus and set the exposure, before you snap the picture? Find a spot, about the same distance away from what you are trying to shoot. Look for someplace in the shade. Do the partway button thing, then, without letting go of the button, aim it at your target and finish the shot.
The camera will set itself to expose for the dark area, allowing for more light to enter the lens. You shoot in the sunlight, and all the dark stuff will appear lighter.
Another issue is if you shoot your subjects with the very bright light behind them. When you shoot people, their faces are in their own shadows, and will appear dark in the pictures. Shoot with the light behind you when ever possible. If not possible, try the expose for the dark area trick.
