if bowel and bladder control is a learned instinct and requires conciousness....how does one keep from pooping the bed while they are sleeping?

You wake up if you need to go, consciousness is not completely lost when you sleep -

unless you have had too much alcohol, or a bad smack on the head, then you just go in the bed, or delusionally wander the house to find a 'good' place - often a corner of the kitchen (I know that is weird, but hey that's brain damage for you).

Your brain is never really "off". Your brain, unless you are dead, controls your bodily functions, awake or asleep. When you are dead, then your body "releases" all the functions, so you, well, "poop" your pants when you die. If you are unconscious, your brain, sub-consciously, controls these functions. Your brain-stem is a natural "filter" for heartbeat, repetitive sounds, breathing, bladder and bowel unless they are "full", and other functions. Sometimes you can voluntarily control your brain-stem and allow yourself to control your diaphragm, resulting in voluntary breathing, while you breath in-voluntarily normally.
