Blue tastes like anything you want it to. If you choose it to be a solid bold taste, it will be so. If you want it as a rough mixture of cyan and magenta, you will have your blue. Perhaps you would like a delicate mixture of all taste-colours in such a way to experience the broadest of blue. It is your choice in which state of mind to be. Anything that you wish to experience as blue will be experienced. Personally, I like blueberries.

If there was a taste spectrum then the taste of blue would be between the tastes of indigo and green.

Mostly quiet and cold, with a hint of spearmint. Although some shades taste like those seven petalled orchid things that smell purple.

I think blue tastes like (if it could taste like anything) would be bitter-sweet, with a cooling sensation like that of super-minty gum, and a texture like that of jello.
