We've been trying to resign our lease since March and our management company keeps blowing us off. We originally received two copies to sign with only two of the three tenants. They keep telling us to just write in the third name on one of the copies and put both signatures on it. Does that deem it void? I feel like they should type that in themselves, make it official, and then have us each sign our own copy (as they did originally).

a change to a pretyped contact should have a place for initials for all parties. if you write it in and send it to them, that will be the only copy they have so there shouldn't be room for arguments about what was agreed to. Just ask to see their copy. have them send you a copy of the completed contract when they sign it and you will have evidence.

To make it official as handwritten, you will need to make sure all parties initial all changes on all copies of the document, as well as sign them.
