Sometimes when I write some text on paper and when I read it again, there's usually 1 or 2 words missing. It's like my brain is thinking so fast that it jumps words and doesn't write them.
Does this have a name? This "eating" of words?

Your problem sounded to me like a written equivalent of dyslexia, so I looked up the term "dysgraphia" on Wikipedia, and found this article:
http://en.wikipedia.org/wiki/Dysgraphia
I'm not sure this article describes your exact situation, but it could be in the ballpark.

I think that just about everybody leaves out words or makes typos from time to time, but if you feel the situation you've described bothers you, you could have yourself tested for processing disorders and learning disabilities and so forth by a psychologist.

When people do that sometimes they say " Oh my mind is jumping ahead of me." This is in reference to them not being able to get pen to paper as fast as the mind is doing.
