As a long time Chrysler mechanic I,m guessing you need to have your throttle body cleaned. Have the IAC or (idle air control) motor checked but on so many Chrysler vehicles with symptoms you describe a dirty throttle body is the reason. A good cleaning and replacement of the gasket underneath will usually do wonders for your idle speed woes.

On the smaller engines, manufactures install a A/C idle-up solenoid on the carbureted models, the fuel injected or throttle-body models have an electronic idle circuit or are controlled by the Engine Control Module (ECM). Have a technician run a diagnostic test on the idle circuit while the A/C system is on.

more than likely you have a problem with the idle air control motor. Hard to say if it's the motor itself or a problem with the computer commanding it to compensate for the A/C being on. It also could be wiring in between.
Quickest way to find out is to have a shop scan the vehicle.

The throttle should have a solenoid that increases the idle when the a/c is on to make up for the additional load on the engine. Yours is either not adjusted properly or is not working.

good question, I have the same problem. Why is the AC being on always a factor in the car stalling?
