A sample of people from all walks of life are ask the same question or questions. From this you can project within a small percentage error rate how people feel. It is usually pretty accurate with most of your major poles like IPOS, and Harris, many others. Some polls are politically motivated to produce a predictable conclusion and these should be disregarded, I would be real skeptical of a Democratic poll about Repuglicans and visa versa.
