I'm sorry to say that some subjects, such as quantum mechanics, simply don't belong in the same sentence as "easiest to read", as they are very complex subjects. I'm sure that some books are easier to read than others, but none of them will actually be easy, by any means.

If you're not into reading complex books that make the mind swelter, then I suggest keeping an eye out for a documentary on the subject. It may not be convenient, but The Discovery Channel and other cable networks will have documentaries a few times a year that cover the basics of both quantum physics and quantum mechanics.

"The Elegant Universe," Brian Greene, is an excellent source. It provides both elementary explanations and, for the more technically inclined, more precise sophisticated explanations. It also puts quantum physics in the context of the theory of relativity and string theory. It turns out that string theory evolved in large part because relativity and quantum mechanics do not agree with each other.

Read the "brief history of time" Stephen hawkings or Schordingers cat is another good one.

Also (Richard Dawkings) - the selfish gene is a good book thos its evolution but i found it fascinating
