These things never turn out as bad as you fear. Just fess up and apologize and offer to replace or pay for it. I'm sure they'll be much more concerned about bigger issues like fire, burglary and the overall security of the place.

Um,,,,Yes, admit the mistake, or accident, offer to pay,,, or better, offer to pay for a new matching set, since it's possible that broken piece can't be replaced.
Admittedly in your house sitting, you were doing someone a favor, but you benefitted as well. To lie, hide evidence, etc, does you a disservice as well as those you are committed to. They took on a liability and risk in having you do this. You take on levels of liability as well in how you achieve your commitment to them.
The issue isn't the object as much as the trust, and association with those you were house stittig for. Would you expect the same from them,,, or anyone, if the situation was reversed?
It's not like you burned down the house, or did intentional damage. Stuff happens. If you do the right thing and they still disown you, at least you did the right thing.

I wouldn't leave a note, I would do the explaination and apology face to face and offer to pay for the replacement whether it be the one piece or a whole set. I would appreciate a face to face more than I would a note.

I would write a note saying how it broke and apologies. If you do anything else, you might create distrust with the home owner, and no more jobs. The reason for the note is so you won't forget or chicken out

Always be honest. The people trusted you enough to watch their house so give them that same trust and tell them what happened, apologize, and offer to pay for your accident.
