you could use 'Factory Manager' however that implies that you oversee all factory operations, if the company has more than one plant then you'd be misrepresenting yourself.

[edited to add]

comment on previous answers, Operations Manager is a person in charge of all operations in a company or department, IT IS NOT the same as a plant manager who is in charge of the plant. In the same way that the duties of a General Manager and an Operations Manager may overlap, the duties of a Plant Manager and an Operations Manager may overlap but they are not the same position.

Also, I concur with the first answerer if your intent is to denote position you may use 'Factory Manager' (as per above) if you intend to convey your title you must use what you had 'Plant Manager'

I feel "Plant Manager" is appropriate... if it's your office job title, you should go with it. I would also cite on my resume what my responsibilities and accomplishments are in my current position... this will give the potential employer a better picture of what you do than just a job title.

How about "Horticulturalist"?

Seriously, though, if your title was "Plant Manger," then that's what you need to put down. When you list your duties for that job, that will tell the prospective employer what the job really was.

If you change your title, it could make you look like a liar.
