The error here is equating nothing with a vacuum like space. There there is something, very spread out atoms and distant objects.
It wouldn't look like anything, it's not black because there is no light for there to be an absence of, it's not uniform because there is nothing to repeat. Most importantly there is nothing to observe it, so there is no concept of appearence with which we can consider it.
