Definitely Greece and Rome.
Our ways of government come directly from them, until the industrial revolution we kept building with the same techiniques and materials as they thought us, our aesthetical apreciations, our philosophy, our ethics, even our social constructions derives directly from them.
Our legal systems, our concepts of "state" and the roots of our religious beliefs, they all are based in Greece and Rome.
We start to learn about our history through them, and at the very end, we turn back to them so we can understand what is going on in the present. They gave us our way of life.

The greatest? Depends on what you value the most. Look at all those differing opinions you've recieved so far. All those people valued many different things. Continuity and China, Philosophy and Greece, Mathematics and Maya, etc.
Personally, I'm of the opinion that greatest civilization would be Rome. It was a monumental catalyst to the rise of even greater civilizations. It spanned a huge territory and with the revenue that came from all over the empire, great works of art and minds came to be, like the Colliseum and the aquaducts. No other empire has yet to equal the progress the Romans made, for no other country has the resources it had. I'd go further into detail, but I've run out of time. I suggest finding a few good history books and crack them open for awhile. Knowlege is power, so what could a little more reading hurt? ~_^

Whenever you refer to Ancient Civilizations, that is a specil archaelogical reference to civilizations over 4000 years:
China, Egypt- (Blue Nile, Nubian Kingoms)- Mesopatamia-(Elba, Damascus, Ur, Ugarit)--mostly delierately destroyed for the same reason that their statues and monuments keep loosing their noses.
You cannot answer that question properyly unless you begin to decipher shards and preserved ancient writings. After the next shift on the earth's axis and the ice melts from the South Pole, we will see preserved ancient cities. So far, the terra Cotta armies of Tibet, the Pyramids of Egypt, the monuments of Easter Island are clues. That said: since China has preserved in Ivory, beneath their most ancient alphabet, information about their years, and also have direct links with the Zhou, Shang, Ming, Zia and other related dynasties, I would have to say China.

It really is hard to choose just one for many of the reasons that prior people have already provided. I'll have to go with the Roman Empire, while not nearly as long lived as the Chinese dynasties, the Roman Empire appears to have shown a greater and more willing ability to assimilate other cultures into their own. After all, some of the later Roman emperors weren't even Roman, but Germanic. Compare this to the Great Wall of China, in and of itself a fantastic accomplishment, was built to keep other people out.

Without question the Babylonian kingdom of Nebuchadnezzar.
In the book of Daniel it is referred to as the head of all the great kingdoms of the world--the head of gold, and each succeeding kingdom is made of lesser stuff.
An interesting side note that shows how this idea of the greatness of Babylon under Neb came to be accepted that there it is possible to buy a very large bottle of champagne that holds 16 litres, or 20 times the normal amount of a bottle of champagne and it is called a "nebuchadnezzar".

The Greeks. I like Aristotle, Plato, Socrates, Euripides, Aristophanes, Sophocles, Herodotus, Thucydides, Homer, Euclid, Archimedes, Ajax, Hector, Achilles, Agamemnon, Clytemnestra, Paris, Helen, Odysseus, Zeus, Apollo, Athena, Pericles, Athens, Thebes, Sparta, Thermopylae, the Delphic Oracle, the Acropolis, Plataea, Salamis, ... (and I'm running out of names) ...
I just think the Greeks handed down a lot of awfully good stuff to us ...
