I don't think you should worry about that. These things are scripted and choreographed so you would never have someone being confronted with being on the show with no prior knowledge. It's all planned and there are numerous pre-production interviews to select the players. There are the contracts to sign, the non-disclosure agreements and hold harmless clauses, etc. And then there are the rehearsals... This stuff is just too slick to be random and unplanned. After all, they have to plan the commercial breaks, too.

freedomhammer is right. There's no way for the person to actually be surprised. I've often thought and said that they must coach those people who appear on the show. I don't think they'd let anyone on who wasn't willing to scream or cuss or fight or show naked body parts. Yeah, they must be coached. And they probably rehearse their reactions to the "surprises" too.
