The grey matter is the areas where the actual "processing" is done whereas the white matter provides the communication between different grey matter areas and between the grey matter and the rest of the body. The grey matter is so-called because in section it has a grey colour due to all the grey nuclei in the cells that make it up. In fact, in the living body, grey matter is pink.yeah it does exist in other animals also

The white matter is rich in fatty axons; the long extensions of nerve cells, down which each sends signals to other nerve cells, and to effector cells such as muscle or endocine cells.
The grey matter is more pinkish, when it is living. It contains the majority of the cell bodies of those nerve cells, with mitochondria, nuclei, and most of the other organelles of the neurone. It turns grey, when either cooked or "pickled" in formaldehyde (formalin) or glutaraldehyde.
