In iTunes, there is a box in front of the song. Left click the box so that it is not checked; the next time you update your iPod, it will not be on the iPod, but it will still be in iTunes. Capiche?

As far as I know the only way to delete the song from the Ipod and keep it in Itunes is to go through your list of songs and make sure that the check mark box is unchecked by the song that you don't want transfered to your Ipod. I hope this answer helps your situation, thanks and have a great day.

When your iPod is plugged in, go to iPod options (little button in the bottom right) and under the music options, click "only update checked songs." Then, uncheck the song you want to delete. That should work. Good luck!
