It sounds like there's something unresolved you're trying to work out via your fantasies. What are the common threads in your stories? There will be plenty of clues, although the most obvious ones probably aren't the most important. Look at the characters as substitutes for other people in your life, the actions as metaphors for events and/or feelings.
Try journaling, or even finding a counselor to talk with, maybe a trusted friend depending on what the issues are. Sometimes it is useful and appropriate to work through the issues via mental imagery (fantasy), like if you need to express anger towards a particular person but have a good reason why you can't in real life.
All of this is probably the sign of a healthy psyche, it just needs a wee bit of assistance to sort itself out.

It would help anyone who wants to answer your question if you'd cite some specific experiences to clarify what you mean.
I guess a basic point is to always try to be aware of (keep at the back of your mind, if the fantasy is so engaging) what is fantasy and what is reality. Actively try to introspect, and verbally analyze your attitudes and desires.
Given this, try not to act or react on the basis of fantasy alone. I don't really know if this helps, you don't give much to go on... good luck!

Dude, they're your fantasies. Let them do only what you want them to do.
Maybe you need to give us more detail on what you mean by "taking a turn for the worse". Are you getting violent? Are you suddenly fantasizing that that bikini model has the head of Regis Philben? Cause that would sure scare me off of bikini models in the future.

Maynerd has a smart wife. Learning to control how you think is the goal of meditation. If your fantasies are getting out of control, maybe you are fanatasizing too much? Or not enough? Learning and practicing some sort of meditation will probably help.

I know what you mean; you're trying to think of something and instead you think of something happening that you don't want to think about. That happens to me all the time, and sorry to say there's not much you can do. Fantasies are all in your mind, and your mind is bound to wander, even to a vision that's violent or gross. Maybe it would help if you wrote it out, because you have more control over your words than your thoughts. ;)
