Celery (Apium graveolens) has been around for thousands of years and was considered a medicine long before it was used as a food. The Greeks and Romans used wild celery to cure hangovers (maybe that's why a stalk comes in a Bloody Mary), banish the blues and purify the blood. Not so long ago folks thought celery tonic was good for the nerves. Nowadays dieters know it helps fill the need for something crisp and crunchy.

Actually what I heard from an old bartender is that Bloody Marys were made for hangovers in the morning. There is something in celery that helps a hangover go away. I can say that this is true for the celery because one morning I was making a salad that called for celery and I ate a couple of stalks and I swear to you my hangover was practically gone. I felt so much better.

They use it for a stir stick and a garnish of course and it usually gets served for breakfast or brunch as a hangover remedy or a nice compliment to brunch. The Original Bloody Mary Ingredients 1.5 oz vodka 3 oz tomato juice 0.5 oz lemon juice 7 drops Worcestershire sauce 3 drops Tabasco sauce freshly ground pepper 1 dash celery salt, freshly grated Serving Instructions Combine ingredients in glass filled with ice. Stir gently. Serve the Bloody Mary in a pint glass. Garnish with slice of celery, pickled asparagus.

The celery actually helps to balance some of the acidity in the Tomato juice. It also adds a nice "crunch" to the drink !!
Besides, a small stalk looks so nice coming from the top of the
glass

I thought it absorbed the salt. I prefer pickled string beans or a kosher pickle spear.
