the most basic definition of a transmission is to transmit power from engine to the wheels. it works on the same principle as the gears on a bike. your legs will only go so fast right? a one speed bike lets you use only the range of speed that your legs will go but a ten speed will let you start from no speed in low gear (legs moving fast) to a higher gear once the bike is going faster to utilize the most of the speed your legs are limited to going. so even though your legs only have one speed, by changing the gears you can get a lot more speed and functionality out of them.

transmission's primary job is to allow the engine to operate in its narrow range of speeds while providing a wide range of output speeds.
Without a transmission, cars would be limited to one gear ratio, and that ratio would have to be selected to allow the car to travel at the desired top speed
So the transmission uses gears to make more effective use of the engine's torque, and to keep the engine operating at an appropriate speed.
