for example...why isn't New Jersey or Florida KEyes as famous for lobster as Maine is...are the lobsters bigger or better in Maine for some reason?

Soemthing to do with the coastal waters in Maine, maybe lot of salt, or cold water makes it different, Just like Maryland/Baltimore Crab cakes..yum@
