Most DVD burn programs keep a running tab on your selected file sizes and warn you when you went over the capacity of the DVD. Although the program will ask you to install another blank disk when the first is full, you may end up with split files. I would keep track of what is saved and just keep burning DVDs for what each one will hold. Make a pencil / paper list of the files you want to back up and cross them off as you burn them. You can use this list as a guide to making labels for the DVDs also.
Burn time varies but it will take a while. Have a 6 pack handy to help pass the time.
