Can anybody tell me how I can find out if my 2000 Chevy S10 will run on E85?

If there is not a decal on the door stating that E85 is acceptable, then the only way it will is with modification. The modification isn't TOO expensive, but it ain't cheap. Check with your G.M. Dealer for recommendations.

check your door sticker on the frame of your drivers door. vehicles that will run on e-85 usually have a yellow gas cap.
