Conger eels - at least the ones shown in the first link below - have quite large eyes, and I assure you they work fine.
That said, there is a possible source of confusion. As with most common names (as opposed to scientific names) "conger eel" has come to mean a number of different things. Take a look at the wikipedia entry below. There's actually over a dozen eels called "conger eels".
That said - to my knowledge, none of them are blind.

Absolutely not - go diving and stick your head near one of their holes. That would prove it!!

My favourites are moray eels, though:

What's that thing on the reef with the big shiny teeth? That's a moray.
Stick you hand in its hole and it swallows it hole - that's a moray.
When you're down on the wreck, something's wrapped round your neck, that's a moray

etc, etc.

From what I have read they have very poor eyesight...but a good sense of smell.
