I can't pick just one, because it was an ensemble cast and without one of them it wouldn't be the same.

All the actors were exceptional. I don't think it would be fair to single out anyone. Maybe it would help you to watch other movies with members of the LOTR cast and I suppose you can make a much more informed decision then.
