how come some keyboards don't have the pi symbol????

You've got the answers but if you need the symbol, you can always go to whatever software you're using and create keystroke that will put one in. I know Word and I believe Word Perfect do that. Don't know if you're using math programs or word processing but you can create a keystroke for it.

I am using a desktop computer and my keyboard does not have it.

it depends on the type of keyboard you have, laptop ones are smaller and more compact, while desktops are usually larger
