Strudel is a German desert, made with apples rolled up in flaky pastry. Gazpacho is Mexican or Spanish and is a cold soup, made with cucumbers. Tahnabour is a yoghurt-based soup from India. Injera is Ethiopian bread. Shaami is a Persian recipe that involves thickening tomato juice.
Interestingly, each of these dishes is acceptable to vegetarians -- although it would be a pretty scrambled menu that served all of them!

I'm pretty sure that Gaspacho ("gazpacho") originated in Spain. I grew up in Spain and it was at one time considered a "poor man's soup".
