Dream Theater is Prog Metal, and they've release a few instrumental tracks. Not many though.
Most of Joe Satriani's stuff is instrumental, but I don't think most people classify his music as Metal. Great stuff though, and worth your time if you've somehow missed it. He's a genuine guitar god.

Steve Vai is a great metal artist with no lyrics. There is one GREAT song called "Bad Horsy" or something like that.

I agree with the other two guys, Steve Vai and Yngwi Malmsteen(spelling?) are definately 2 of the most influential composers around, their stuff just blows me away.
