The great sleepers of this draft (as in getting them in Round 6 or later) are:
DeAngelo Williams, RB, Panthers -- It's not if Foster gets hurt...it's when. This guy put up insane numbers behind a non-descript line at the University of Memphis. Imagine when he runs being a great one in Carolina. He might make the 7th, but if you do draft Foster, try to get him in the 6th as insurance.
Heath Miller, TE, Steelers -- Randle El is in Washington. Bettis is on vacation. Big Ben needs a target he knows, and one that he can find in the redzone. Do the math. 8th is the latest I can see him hanging around.
Matt Jones, WR, Jaguars -- Jimmy Smith retired. Williams is a disappointment. The dude is 6'6" and ran a 4.3 in the 40. He's a white Randy Moss without the flash and attitude. If you don't get him in the late 9th or early 10th, don't think he'll be there later.
L.J. Smith, TE, Eagles -- Newsflash: TO is gone. Reggie Brown is in his 2nd year. Donovan is gunna be looking for someone he knows. Don't look for huge yards after the catch, but L.J. will get good looks. He should fall off the board in the 9th.
Eric Moulds, WR, Texans -- Last I checked, he was the #1 WR in Buffalo before the trade. He makes teams play Andre Johnson straight up, and when Andre kills them and forces the double, that's single coverage on Moulds. Remember, there will be an improved running game in Houston as well. Look for him to go in the 10th.
Joe Klopfenstein, TE, Rams -- The Rams ditched all their TEs, then drafted this rook outta Colorado and Byrd outta USC. Klopfenstein is NFL-ready, and will see a lot of clock in St. Louis' new offense. Holt and Jackson help his situation out. He'll be around in the LATE rounds like 14th being the earliest he goes.
Donte Stallworth, WR, Saints -- New QB, New coach, surrounded by threats. Word is Stallworth is the new #1 WR in New Orleans. If this is true and holds true, he's gunna be Brees' favorite target. He should be available in the 8th, MAYBE the 9th.
last but not least...
Dominic Rhodes, RB, Colts -- For whatever reason, people are writing this guy off. He went for 1100 yards of offense and 9 TDs when James went down in 01. Sure, the Colts drafted Addai, but we're talking about an injury prone rookie in a pretty complex offense. He'll play, but Rhodes will start. If guys are napping at your draft, Rhodes can fall to the 6th. If he's there, take him.

I wouldn't call these all sleepers, but at least good value for their draft position:
1st Round
Since you're at #7 - which is a tough spot - grab Steven Jackson with your #1 pick - he should shine now that Martz is gone - could easily put up top 4 RB numbers this year.
2nd Round
I don't think there are really any sleepers here. Since you'll have the 4th pick in rd2, and 14th overall, you should be able to grab another quality RB - maybe Cadillac Williams. If there are already 10-12 RB's gone thru 13 picks, then go for one of the top tier WR (Chad or Owens - I'm not buying Smith can put up those #'s again)
3rd round: If you did take a WR in round 2, look to Kevin Jones in rd3. The new offensive look should help him. If you have 2 RB already - look at Roy Williams -for the same reason.
Other "sleepers"
RB
Warrick Dunn is always a sleeper - always produces
Thomas Jones - Benson may be hurt, if so Jones is valuable
Deangelo Williams - Deshaun Foster is made of glass
Lendale White - I don't think the leash is too long for Chris Brown
WR -
Michael Clayton - poised for a comeback year
David Givens - s/b #1 in TEN
Baltimore's WR's - Mcnair is a real QB - (Mason/Clayton)
Greg Jennings - GB - Favre likes him, and when Favre likes you - balls come your way (take that comment how you will)
TE -
Vernon Davis - SF - a monster
Marcedes Lewis - Jax - solid looking rookie
Zach Hilton - NO - the new Gates for Brees?
QB -
Delhomme- should put up top 5-6 QB numbers while falling to rounds 7-9
Brees - This guy has been solid the last 2 year; and now he actually has better WR than he's ever had before and then add Reggie Bush? I like it a lot. And he'll be there in rounds 10-12 - an afterthought on most lists.

Marc Clayton of the Ravens now that he has a decent QB and he's opposite a good receiver in Derrick Mason.
Also, apparently Ronnie Brown is a good sleeper, because in all of my drafts so far this year he's fallen past pick #15 and I was fortunate enough to get him with pick #18 in one draft giving me both Alexander and Brown - that shouldn't happen.

7th pick, you don't need to think sleeper until late rounds.
Late round sleepers definetly
M. Clayton (Ravens) WR
R. Brown RB if you can get him with your 3rd pick do it, I agree he has been slipping in drafts and for no reason.
C. Cooley TE definitely could start at TE on my team!
S. Graham K will be available late too.
Once Defenses start to go get one fast though a very limited number of great defenses. Sleeper Defense could be Washington, or Jacksonville.
Think about B. Leftwich at QB too, he was playing awesome last year until his injury.
