Holy crap, I have to give big thanks to HBO for my ability to answer this one. And Robert Wuhl, or whatever his name is.

Apparently Macaroni was a club for "fops."

Oh shoot, I just reread your question, and realized you're not asking why, but what.

Damnit! But I'll finish my story anyway.

So there's this club in England called the Macaroni Club. It was for fops - you know, "fancy" men.

Some English dude wrote this song, in essence calling Americans "queer."

Yankee Doodle keep it up, Yankee Doodle dandy, mind the music and your step, and with the girls be handy. In the olden days, groups of people would get together and sing and party. A person would make up a verse, then it would go to the next person to sing a verse. Songs didn't have to make since, it was all in having fun. To add a verse to this song one could say. Yankee Doodle was a man , he never drank no Brandy, he always ate Macarroni instead, and followed that with candy.

I believe he said that he stuck a feather in his hat and called it macaroni..so it is really a toss up between the feather and the hat.

it was the hat and feather together, sort of.
the redcoats had been laughing at the country bumpkin colonists and they joked that they thought they were "sophisticated" by putting a feather in their hat. as if they were a "macaroni",(a member of the macaroni club, a very fancy club in england)

He was calling the style of dressing up his hat with a feather 'Macaroni' ... The song was making fun of the 'rustic' American's pretensions to high fashion, kind of like trying to be 'hip hop' with junk from the Goodwill store.
