So how do I use torrents the way they can't block it???

You probably can't use torrents in a way they can't be blocked. Torrents use internet ports on your computer that are easily blockable.

The university does this to protect themselves, most torrents are people sharing music and videos, which could get the university sued if the RIAA and MPAA caught them. So they block any illegal activity.

It's the university's network, so you have to play by their rules, or they could block you completely.

It cuts down on their backbone load and also saves them from liability of copyright infringement associated with torrents...
You can try to probe for open ports but the guys I know that do the University stuff have it pretty well planned out and locked down... Often with Cisco's help, so its either bring in a service from the outside (cable or DSL on a non-school phone) or get friends off campus to download for you...

There are some schools that block a lot of info through thier servers. It drives me nuts
