I have a plastic line now and want to know if it's worth the trouble and expense of swapping it for a copper line.

Copper is a pain, if the plastic came with the refrigerator keep on using that.

Unless the plastic is rated for human consumption - switch immediately to copper. Even if it is I would switch anyway as plastic, as flexible as it is now, can become brittle and crack. You don't want the problem of seepage rotting out the floor under your fridge nor a flood should it let go quickly.

Lic plumber - I would never use plastic water supplies in my own home. Copper is more dependable.

Copper is worth the effort it will last for decades.

I wouldn't go through the added expense of changing it until the need arises and you may never need to.

naw, they come with a plastic line, most do! all the houses i build have plastic lines..........
