Molds are small scaled-organisms. They are living things and they multiply in numbers. They grow on bread because bread gives them the necessary nutrients to grow and reproduce. Technically, they don't just grow on bread but on places where the factors to support life are sufficient, mainly water (moisture), heat and food.

Molds don't just form in bread out of nothing , they are usually carried by air. Most probably, mold organisms are already in bread at the moment they are baked, it's just that they so small in quantity that their presence is not that significant.

Leaving bread for a long moment in a warm and damp environment helps in the growth in numbers of mold.
