On sunny days I'm fine, but when it starts to rain or get humid, I wake up with a sore throat and ears. I keep my window open at night and hay fever tablets seem to help me after a couple of days taking them....

It sounds like you are getting inflamed and irritable sinuses as a result of hay-fever. There are a few products you can take but I would you suggest you see your local health food store. They do have some really good remedies for mild cases that are natural. you wont be filling your body with junk.

It would seem you have a pressure problem in your ears. when the weather gets cold the atmospheric pressure drops.

I would go see a ears, nose throat specialist and see what comes of it.
