Because the art is beautiful. and not only that, it has a great storyline that goes with the game. so the players get to interact with the game and become part of "their" lives and adventures.
Other people just like it because the art is really gorgeous and great. Some like it because of the hot chicks they have.
mostly it's because it DOES look better than the rest and it HAS a great storyline. need i say more? =)

Speaking strictly on the US market it all mostly boils down to exceptional timing and agressive marketing.
Timing - In the earlier days of the SNES there was not a wide selection of RPGs to choose from. The number RPGs available for the SNES at the time of Final Fantasy Mystic Quest and Final Fantasy II were few so Square had little competion until further down the line around the time of Final Fantasy III. Final Fantasy VII was one of the very first 3D RPGs for the Playstation, getting an upper hand on 2D RPGs such as Suikoden.
Marketing - By the time of Final Fantasy III the RPG market was becoming rather competitive. Square already had a good name from the previous success with Final Fantasy II so they launched ad campaigns such as "Two's a party, Three's a crowd". At the time it was fairly uncommon for a video game comapany to market a game as much (Bahamut Lagoon, released not long after by Square, recieved almost no advertising in comparison).
Final Fantasy VII also became one of the top reasons players sought to but a Playstation as word among the public spread of it's previously unheard of graphics and story.
Also something to keep in mind is the business practices of other companies that benefited Square in the end. Atlus (Ogre Battle, Tactics Ogre, Persona, Rhapsody, etc) was notorious for shooting themselves in the foot time and time again by bringing a quality game to America, underestimating it's potential, giving it almose zero publicity and discontinue it's production only after producing a minimal number of copics. Similar trends can be seen in examples like Konami's Suikoden II or Enix's Valkyrie Profile.
After the huge success of Final Fantasy VII Square had acquired a large enough fanbase to become what it is today. The rest is just history :)

What makes Final Fantasy a strike to the RPG genre? Perhaps it made a lot of first move such RPG game that consist of summoning, 3D, Weapon exchanging, weapons urgrading or remodelling, multiple playable characters that can be swap to create different combination of team, front and back line system, hidden playable characters, good storyline, limit breaks, have your own pets like chocobo, online playable environment, and many many more. It has proven to the world that what supposed to be FINAL is not goign to meet an end so soon and now Final Fantasy is always one of the most anticipate title for most of the RPG gamers. These are only my personal point of view, hope it may help.

ive loved Final Fantasy from the beginning and im waiting for the next installments at this very moment. final fantasy is popular, not because of its graphics or because its got big bucks funding from other companies, but because of its playability and character development. the thing i like most about final fantasy is that i could really relate to the characters. some rpgs are just out there, theres no way to say 'well yeah, his entire planet was blown up by a huge dragon, i understand exactly what hes going through...' with final fantasy, they confront some pretty big things, but the way the characters react to the situations is the way i would react...i can relate to their actions. i still think final fantasy 7 is the best game ever made. it wasnt the first rpg i played, but its definitely set the bar for every rpg after it and still nothing comes close. ive expanded into other companies, but nothign comes close to playing ff7 the first time. ive played it the whole way through about 7 times now and i never get tired of watching the story unfold. pretty much every time i deploy to iraq, i take my ps1 with the lcd screen and ff7. ill play it allt he way through, sidequests and all, and be done by the time i get back home. never get enough of it. final fantasy is successful because the creators care about the game. they dont realize subpar material, in fact a lotta Squares games get pushed back because theyre adding in additional content. they care about the fans. if they didnt, there woudl have never been an advent children. people still want a sequel to final fantasy 7, and i see it happening eventually..i cant wait. good question tho man ;)
