The idea is that the hotter the climate, the spicier the food they will eat. Spicy food makes you sweat and sweat cools you down.
Equatorial countries like Costa rica, Egypt, Singapore, thailand.

I would think that Thailand, Korea, Sri Lanka, Cambodia, Laos, Viet Nam all have foods which are very spicy and hot.

In India, foods are spiced for heath reasons, it's an ayurvedic medicine thing.

Best to not get confused about that difference.

Those other countries do it for flavor... or they think that spiced food lasts longer.
