Gallic acid is combustible, keep away from open flames. It is hygroscopic so it should be kept in its original bottle, but put the bottle in a dessicator, can be one of those special cabinet-type dessicators or a big screw top jar with Dryrite granules on the bottom. You can store it at room temperature, but keep it in the dark.

Try reading the HazMat/MSDS sheet that came with the gallic acid.

Putting your gallic acid in a desicator in likely a good way to store it but definitely check the materials info sheet on storage.

Keep the lid tight and being hygroscopic, it will attract H20 from the air, so keep it in the freezer or anywhere that is dehumidified if you worry about it ruining. Otherwise, just keep the lid tight.
