The ship has environmental controls which not only creates a breathable atmosphere but also keeps things stable as though standing the right way up so the ship could do a triple look somersault and then a barrel roll, but to everything on board it'll be as if the ship is standing still, only time this is affected is when the ship is attacked. That's why in star trek (and obviously star wars) when ships are attacked, their Environmental controls are usually a big worry...

A very advanced form of artificial gravity involving force fields is at work aboard the Falcon. Interstellar ships of the future will all have this feature as soon as they work all the bugs out of it.

Either Lucas-film came-up with the "steady-chair" and "steady-cup holder" - (bit like the steady cam), or they just use the force...

they must have a gravity device inside the ship, but they do sorta jump about at times though dont they ;o)
