Why not play peoples gullible nature and get your class to sell conspiracy books and global warming brochures. With a minimal investment, just make up the details and historical information as is the norm with the genre, and the easily led (see above) sheep will beat a path to your door. Not only could you make a bundle for your class but they could learn, once they see the clods who buy into the scam, a valuable lesson in the importance of thinking for themselves.

If you have a little cash up front, http://www.thehottees.com has buttons and magnets that you can buy in bulk. Their pack of 100 buttons costs like $99 or so but you could sell them for $2 to $2.50 each and double your money. It's easy to get a LOT of people to cough up just a couple of bucks.
Buttons or magnets are small and would be easy to carry around in a small bag. You could carry them to the doctor's office, grocery store, everywhere you go. And they would be easy to distribute to people who want to help sell them. FWIW I think that would be easier to organize and less work than a bake sale or car wash. If you had 20 people helping you and each one sold 20 buttons, that's 400-600 bucks or more of profit! You could start out with one bag and buy more as you sold out.
They only have a few school designs up, BUT go to the bottom of their home page. Click on the pink banner and it will take you to a larger marketplace where you can do a search for school buttons or magnets. There are thousands of designs there and I have seen several school designs, so I bet you'd find something nice.
Another idea: if you are good at drawing or can do Photoshop, you can click the other banner at the bottom of The Hot Tees and set up your own free gift shop. Then you could donate all the proceeds to your project. The company handles all of the customer service, credit cards, etc. You just design and upload onto the products you want to offer. I also saw one person offer products with pictures that their children had drawn, so you could probably do the same thing with your student's artwork.

How about a recycling program? Invite the public to drop off all their cardboard, steel, tin cans, plastic, newsprint, asphalt, used cooking grease, old computers, phone books, TV sets, glass, cell phones, magazines, scrap paper, and all other items that aren't quickly biodegradable. Load it all into a semi trailer and take it to your recycling center for payment. This can be a once a month (or twice a month) collection effort. It not only raises money, but it also helps save our environment. And, you can create a REturn, REuse, REcycle education program at the same time to let people know about the delicate ecological balance between man, plants, and animals and why it's so vital that we all share the resources of this Earth frugally and intelligently, as Nature (or a evolutionary 'big bang' process, or an intelligent designer, or God) intended. -RKO-

ask around in your neighborhood if the kids can come and clean up the yard or help cleaning up the basement. A nother one is ( its is happening in my neighborhood a lot0 the kids ask the elder people if the can go shopping for them. Old people usually don't need much and like to give $ 5.-- or more. Wash cars, sell cards what the kids made. It just depends on how old the kids are.

car wash, selling candy bars ,having a class carnival and selling raffle tickets to win a cheap prize , have a talent concert and make people pay per person,have each person go door to door to see if their is anything they can do to maqke money and make it a contest for the kids to get in to it.
