The temperatures are more or less the same. If for example, you boil water over a low heat or a high heat it's still boiling and is still at 100 centigrade / 212 farenheit - it's just the intensity with which it boils that changes. The same is true for oil in a frying pan but different oils boil at different temperatures, most boil at between 350 and 400 farenheit but some such as olive oil have a higher boiling point (570 farenheit for olive oil).
To cook something at a lower temperature in a frying pan would mean having to remove it from the heat eaither by holding it above the cooker or periodically moving it away from the cooker and allowing it to cool down.
With an electric cooker you can regulate the heat and chose the temperature at which you cook, this is much more difficult with a gas cooker as there is less variation in the temperature of the flame.
To answer your question tho' - medium heat in a frying pan (assuming it has oil or fat in it) would be in the order of 250 to 300 farenheit and a high heat would be upwards of 350 farenheit.

There are variables that will affect what you are doing. How much heat your burners on your stove produce, and the type and size of the pan will also affect the cooking time. Also, how many patties, how cold they were, and how hot the pan was when starting (and how hot your oil was). You should never need oil to cook hamburger patties. The average fat content of all hamburger patties is sufficient to keep them moist and free from any kind of serious sticking. Simple solution to your dilemma, increase the cooking time, and heat your pan to a hotter temperature before you begin. 1st make sure that the pan is well heated first. When you add your patty to cook in the pan, if it does not sizzle distinctly when it is first touching the pan, your pan is not hot enough to begin the cooking process in the best manner possible. Eating the meat well done to medium well is absolutely the best for nutritional content and it is easier to digest. The protein content is higher, and the cholesterol level is lower.

The heat settings on your stove represent the amount of watts that the burner element is putting out. At high heat a small burner puts out 1250 Watts and med heat is probably half that. The temperature will depend on the pan, thickness of metal and what is in the pan.

I would say that on medium heat the pan temp. is about 160C and on high heat it is about 200C. But of course these are not very exact as we are not using a thermometer.

Well it technically depends on what type of pan you are using and its ability to conduct the heat from the burners.
So you should try using a thermometer.
