I don't like many cover versions but i like these-

Johnny Cash- Personal Jesus (done by one of my fave bands, Depeche Mode)
Martin L Gore- Oh My Love, Das Lied Vom Einsamen Madchen
Rammstein- Stripped/Das Modell
Joy Division Sister Ray
Erasure- Can't Help Falling In Love (the album is actually called Other People's Songs)
Sheryl Crow- Sweet Child O' Mine
G4- Bohemian Rhapsody
Nouvelle Vague- Love Will Tear Us Apart/ Just Can't Get Enough
Like I said, I don't like that many cover versions so this is it!

REM's cover of 'First we take Manhattan' by Leonard Cohen is pretty cool. John Cale's cover of "Hallelujah" is better than the original.
