Are daisies and hydrangeas in season in Dec. or Jan.?? When are they in season and would be good to use in wedding bouquets??

If you have the money, everything is in season in winter! I used to work as a floral designer. Most of the flowers used in shops are grown in greenhouses, so anything can be grown year round, as the conditions can be controlled. However, some flowers will be more expensive in winter.
Winter bouquets are usually white to symbolize the season (snow) with lots of rich greens. Typical wedding flowers used year-round are lilies, orchids, gardenias, freesia, roses, daisies/mums. I have a nice series of floral design books that are one for each season and show some nice bouquets and arrangements by season-they are a little old (10 yrs?), but maybe you will find a copy on Ebay and use it for inspiration (Flowers for All Seaons-Winter, by Jane Packer). Although any good florist will be able to help you too.

Daisies are available all year round, and so does hydrangeas. Hydrangeas are more expensive in Dec. and Jan. The blooming season for hydrangeas are spring and early summer. Hydrangeas look very elegant in wedding bouquets, adding daisies to the hydrangeas would make the look cheap, so i suggest, you use other flowers with the hydrangeas other than daisy, unless you are thinking of the gerbera daisy.

If you want something that is naturally in season for a bouquet, pansie is pretty much your only option. I recommend the popular poinsettia for Dec/Jan wedding, unless money is of issue. A poinsettia bouquet would be outstanding against the white dress!
