Yes, night market is very good. You must taste Taiwanese food on night market. If you want go to Taipei City, you can take Travel Guide on Taipei MRT station ( http://english.trtc.com.tw/ ). Taipei MRT and Bus will be able to take you to anywhere in Taipei City.
Taipei's public traffic system is convenient.
And,
If you want go to middle place, south palce or east palce, you must have more time and know Taiwan friend for you travel. You will have fun in Taiwan.

there's some water parks, and a miniature life-like park (like miniature buildings/people, etc...like at legoland), but the best thing about taiwan is the foood and cheap shopping. definitely go to a night market and try new food.

There are some theme parks up near Taizhong,
But other then that, you should go see Danshui up on the north west coast.
