With a strong degreaser. If it's really bad try an automotive degreaser

I found that a good degreaser like dawn with oxyclean works wonders. Put down newspaper and an old towel before beginning, squeeze enough dawn to light ly soak the hood vent, let it sit for 15 minutes then use hot water and wipe the grime away.

straight concentrated simple green, spray a mist of it on and then use a sponge and some elbow grease.... no pun intended on the grease thing.

if it's the grates that are removable that are dirty soak them in a 50/50 simple green to water solution for a few minutes and use a soft toothbrush to scrub the grease out. rinse with hot water.

baking soda and joy detergent, make a paste in a bowl get a tooth brush and scrub on.... let it set for about 20 or 30 minutes and wipe clean with a damp rag... or buy some Mean Green cleaner, usually found at Wal-mart or family dollar and spray and let sit for 5 or 10 minutes wipe off with damp rag..... spray any kind of degreaser, 409, Mean Green, Greased Lightening, and whip off, if its really dirty you may have to repeat this several times.

There's a product near the "Ajax" and "Comet" in the store called "Barkeeper's Friend."

You'll love this stuff. Also, it's excellent for removing soap scum from shower glass.
