I have only been to dinner a few times when an expensive bottle of wine was ordered. No, they did not ask to run the credit card first.

The staff of the restaurant (cooks, busboys, waitstaff, managers, coat check, etc) are notified of your intentions and they all come to your table to see what kind of fool would order wine in a restaurant that cost that much and of course they are relieved that they finally got the white elephant off their inventory.
In some restaurants they put the bottle in a container which is then put into a sort of hammock which four waiters carry to your table singing songs and run through the place yelling and screaming and showing all the other patrons your purchase. (whoops, that was Farrells Ice Cream Parlors),
Of course what you should do is order a very expensive bottle of wine and when it is presented to you and opened for your pleasure you should send it back saying it doesn't taste just right how can then tell you you are wrong????
Or you can just be a snob and make sure everyone in the place knows what you are doing..
Have fun, eat well and spend your money wisely....

actually, the coolest thing about it is that, if you, say (for example) order a $1,500 bottle or two of Chateau Petrus, or something else in that price range, then the FOOD IS USUALLY FREE!!!, no matter what you order,or how much of it.
many people don't know about this, but it is common knowledge among wealthy folks. if the restaurant tries to charge you for food, after your liquor and wine bill is over $3,000, then that restaurant is definitely owned by poseurs.
once, in a high-end restaurant in Mexico City, I spent $5,000 on alcohol for 6 people, and got nearly $850 worth of fillet mignon, lamb, veal, etc., and all the trimmings for absolutely nothing. the unwritten rule is apprarently that only the middle class pays for food.
now you know!

No, they don't. If the bottle is exceedingly expensive they might remind you politely of the cost to make certain that you didn't miss a 0. I once dropped 2 bottles of Chateau Margaux, freshly purchased, on my frontsteps. I felt like crying and almost licked the steps.
