we thought we were growing mint at first. but then the plant started growing a strange fuzzy white flowery top.
i've never seen this before, so i'm just not sure.
could this actually be a weed that killed our mint?

That's strange. It sure looks like mint. Pull a leaf off and rub it between your fingers. If it smells like mint, then it is mint.
But, I've never seen mint go to flower like that, so, I don't know.
I think it is mint. Check out this pic from wikipedia. A mint plant that is flowering (the flowers are pink, but they look just like your plant)

That's mint, all right. Two sure ways to tell:
1. It smells and tastes like mint.
2. It has a square stem. Roll the stem between finger and thumb. It it feels square, you've got mint!
There are at least a dozen different varieties of mint: apple mint, orange mint, spearmint, peppermint, etc. etc. Each tastes slightly different but they are all mints. And they will all flower, given time. Pinch the flowers off if you plan to keep harvesting the leaves. Once the plant has set seeds, it's inclined to stop growing as its job is done.

It is mint if it smells like it. Mint plants have a very strong scent. The mint is a plant and every plant will flower under the right conditions.

It has proably gone to seed as all good palnts do in order to make babies. Rub one of the leaves between your fingers, If it smells strongly of mint then it's mint.If you have a hotter than normal summer the plant is going to seed sooner than normal which may be why you have never seen this before.

It appears to be peppermint because of the white flower. If it were spearment, it would have a flower like yours, except it would be light purple.
Either way, they are from the mint family.
