A lot of the older pubs were family owned, and most customers went to a certain pub because of family loyalty. To show their customers that a pub (or multiple pubs) was owned by a single family, they would put their own coat of arms on the signs outside.

I think it was to do with heraldry
They were meeting places for the Kings men, the knights of that particular shield.
