Well, each mall is kind of different. Barton Creek Mall is right off Mopac and 360 and is the upscale mall. Lakeline mall is at 620 and 183 (near Cedar Park) and is pretty varied. They just opened a hollister there and they have the hottest dudes in there....sigh...
You've found HIghland. Those are the regular malls. Northcross is pretty dead. There's also a big one (not sure of name) at 360 and 290 and Lamar.Then you have outlet malls all over the place. There's a new one in Round Rock that opened yesterday, right on IH 35, one out in BeeCave that is still adding stores, one in Georgetown and several big ones in San Marcos (also right off IH35).
The Arboretum (183 and mopac) is not an inside mall, but still a nice shopping center with upscale stores, across from them is a strip mall (on Great HIlls Trails) that has a Saks Fifth Ave outlet.
There are also some pretty cool and funky strips. One is on South Congress Ave, the other on Guadalupe across from UT. Very fun, even just for looking and First Thursdays is a big deal on South Congress, and 3rd Thursdays on Guadalupe.
For roller skating, it depends on what part of town you're in. Playland is right off Burnet and 183 and they do an adult only skate on Tues night that is fun. It's kind of old and funky but still a great atmosphere. There's also Playland to the east, and Skateworld and Round Rock Roller Rink in the north.

IMO, Barton Creek is the best mall.
An big outlet mall just opened in Round Rock. There is also an outlet mall south of the city approx. 25 mins.

Highland Mall, Lakeline Mall, Barton Creek Square [best one :)] north cross mall [tiny mall], the aboretum [sp?.. anyways, very very nice], La Frontera [great] and the new Round Rock Outlet Mall opened 2 days ago! It ios VERY nice, and i suggest you check it out. You can also travel 10 minutes south to Tanner Outlet Mall in San Marcos.. it's like the biggest outlet mall in the US i think. :)
