How do you guys feel about using Quickbooks Pro to run an eBay Business? Is it easy, or does it require a lot of time and energy?

From accounting standpoint, an eBay business is a very simple merchandising firm (unless you have employees, in which case QuickBooks and its payroll service would come in handy). You probably don't need double-entry accounting for such a simple company.

I'd reccomend Microsoft Money Deluxe + Business - even an old version for $10-20 would work nicely for an Ebay business... keeps track of inventory, invoices, expenses, A/P, A/R, etc. - has a nice invoice printing program too... give it a look!

And good luck, Ebay hasn't been the greatest or most honest marketplace these days, hope you're an honest guy who does well!
