or reason for it being there? What would happen if we didnt have one part, like the white of the eye or the colored ring?

As with all parts of the body, with the possible exception of the appendix, each part of the eye serves a specific function. See:

Every part of the eye serves a distinct purpose. Some are involved in lubrication and prevention of infection or injury, some are involved in the focusing and refraction of light, some are involved in transforming the signal received through light into neural impulses to the brain, some are involved in moving the eye into position in order to see, etc.....

We would just "see" differently, and whatever that was would seem normal to us. There are many more ways than the way we see things to see things! That's what makes the "Intelligent Design" argument that an eye is "too complex" to evolve so ridiculous, there would be many ways to design a much more "suitable" eye for a human, if something intelligent were "designing" it!
