when do i pick the peppers of the plant

You don't say what kind of pepper you're growing, but it's true that all "green" peppers turn red when ripe.

If what you are growing is the standard green frying pepper, size determines when to pick it. You want it to be as big as possible. If you start to see what seems like a brown shading on the shoulders, that's the beginning of its turning red. It won't get any bigger, so if you want green peppers, pick them then. I like to let a few of mine turn red for colorful additions to salads, relishes, etc.

grew mine from Tai hot peppers purchased in supermarket! great crop.I pick some when they are green (use in green curry etc,)the remainder pick when red;then sun dry on fine netting in order that air circulates,then store in air tight containers or bags,but hang two or three bunches of green and red in the kitchen for immediate use.If you mean "sweet"peppers you can do the same pick some green,some red,wind dry or freeze.I prefer wind drying for better flavor.Good luck .Enjoy!

pick them while green so they ripen off the plant and then you get more peppers growing

Best to wait until they turn red (unless they are a variety that does not turn red).

depends,on wat kind .most will change color.fr green 2 red yellow.once they change pick them
